EASTER DINNER 2023

Easter, which celebrates Jesus Christ’s resurrection from the dead, is Christianity’s most important holiday. It has been called a moveable feast because it doesn’t fall on a set date every year, as most holidays do.  Instead, Christian churches in the West celebrate Easter on the first Sunday following the full moon after the vernal equinox on March 21. Therefore, Easter is observed anywhere between March 22 and April 25 every year. Orthodox Christians use the Julian calendar to calculate when Easter will occur and typically celebrate the holiday a week or two after the Western churches, which follow the Gregorian calendar.

This years observance of Easter is April 9, 2023 and definitely colder than it was last Easter which was on April 17, 2022.  This introduction is essentially a copy and past from my Easter 2016 web page.

I have five (5) web pages celebrating Easter going back to 2000 and wasn't planning on doing a Easter meal this year, but remembered I have a large Butterball turkey in our youngest daughter's freezer and needed to use it up before it got freezer burn.  This was more or less a last minute plan and I called it our Reader's Digest Easter Dinner, since there wasn't a tremendous amount of various food items, but plenty of the essential things we like.

Our dinner was scheduled for 5:00 PM, but somehow I was running about an hour behind!  My multi-tasking skills were a little lethargic for sure. 

SAFETY FIRST

For decades, I have been doing deep fried turkeys for various family gatherings and the past few years with all the reported fires caused by the turkey fryer grease fires, I have moved the turkey fryer burner/turkey pot in the yard as an extra means of safety.  Most of the turkey fryers/pots come with a small coat hanger type apparatus to lower your turkey into the hot oil and that is no doubt the major reason since your hand is too close to the hot oil and you do get some splatter from the hot grease while slowly lowering the turkey into the hot oil and you drop the turkey into the hot oil and the splash over oil ignites!.  I solved that safety issue by making a long metal EMT rod with a hook on the end allowing you to be a couple feet away from the oil as you lower the turkey into the hot oil.

I have in the past, deep fried turkeys on the deck and carport for decades without any issues, but Murphy's Law never sleeps.

THOSE ATTENDING

Those attending our Easter dinner aka supper were Laura, Travis and Trevor Huneycutt, Shane Hough, Lisa, Xander and Lily Gonzales, Joyce Porter aka my bride and yours truly Bill aka Mickey Porter.  I prayed to God through Jesus Christ our Lord and Savior and thanked Him for His many blessings for allowing us another Easter and each and every day that He allows and to bless the food to the nourishment of our bodies!

PS:  It would have been great to have our West Coast family with us; Bill Jr., Nicole, Will and Jake.

OUR MEAL

Our meal consisted of Deep Fried Turkey, cornbread dressing, giblet gravy, green bean casserole, yellow corn, cranberry chutney and home made buttermilk lard biscuits.

Notice I was way behind in getting a few pixs taken.  My fork took priority..............grin if you must!

My bride's home made buttermilk lard biscuits were "off the chain good", in other words Awesome!

EASTER EGG HUNT FOR MISS LILY

Miss Lily wanted me to hide Easter eggs for her and how could her PAW PAW say no!

Miss Lily is normally non-stop!

I hid the eggs which were twenty-four (24) and Lily found 23.  I looked myself and couldn't find the missing Easter egg.  It will turn up next time I cut the grass in all probability.

RETRIEVING ONCE USED COOKING OIL

My current stainless steel turkey pot which I have had for many moons, the drain spout freezed up I guess from the heat.  I tried to free it up, but didn't want to put too much pressure on the valve, of which I could damage the pot itself and had to go to plan B in order to capture the once used oil for later usage without incident.  I have wasted at least one half gallon the last time trying to get the oil into the red funnel and it stay onto the plastic cooking oil container and finally made a Rube Goldberg maybe an Ethiopian engineered apparatus that would do the job.

As evidenced by the pix, the contraption works.  I used scrap aka unallocated wood and a few deck screws and two rubber bands to complete the impromptu project.

In closing, we had a great time.  When family and friends can get together and share a meal, it doesn't get much better than that.  As I often publish on this website at every opportunity, "Two of the Greatest Ships that ever Sailed, Friendship and Fellowship" and we definitely sailed together.

Our Pastor/Bishop Sam Abee at the Wadesboro Church of God here in Wadesboro, NC gave a powerful spirit filled Easter sermon titled, "The Eighth Day" and the Spirit of God (Holy Ghost) manifested Himself during the service.  We also did communion representing the broken body of Christ and His shed blood on the cross for the remission of our sins.
