Parmesan Chicken Cutlets

PARMESAN CHICKEN CUTLETS

INGREDIENTS:

1 1/2 lbs. chicken tenders, cutlets or fingers (usually 6 tenders)
1 1/2 teaspoons Wild Bill's Meat Rub
1 1/2 teaspoons freshly ground black peppercorns (Tellicherry)
3/4 cup all-purpose flour
2 large eggs, beaten
1 1/2 cups Panko breadcrumbs
1/4 cup grated Parmesan (don't use the Kraft stuff with the green label)
1 tablespoon mustard powder
2 teaspoons Morton table salt
1/3 cup olive oil
1 lemon, halved (optional)
Frank's RedHot Sweet Chili Sauce (optional)

Season chicken with Wild Bill's Meat Rub and let sit out at room temperature for 30 minutes.  Place flour in a flat bottom pan; season with 1 teaspoon salt, 1/2 teaspoon black pepper and stir to combine.  Beat eggs in a second shallow bowl.  Combine Panko, Parmesan, mustard powder, 1 teaspoon salt, 1 teaspoon pepper and 1 teaspoon Wild Bill's Meat Rub in a third flat pan.  Dredge chicken cutlets in flour, shaking off any excess.  Drench in bowl with beaten egg and turn to coat.  Lift from bowl, allowing excess to drip back into bowl.  Coat with Panko mixture, pressing to adhere.  Heat olive oil in a large heavy skillet or a cast-iron skillet over medium-high heat.  Fry cutlets until golden brown and cooked through, about 4 minutes per side.  Transfer cutlets to a bakers rack allowing any excess oil to drain on paper towels below or place in warming oven at 170 degrees F.  Serve with lemon, Chili Sauce and your favorite sides.

YIELD:  3 servings of 2 cutlets each.

Above Parmesan Chicken Cutlets prepared on 01-22-15 and were delicious; crunchy golden brown crust, moist and juicy inside with the flavors balancing very well.  Served with fresh steamed buttered corn on the cob in the shuck microwave style, steamed broccoli with cheese sauce and added just a little touch of heat to the cutlets by using Frank's RedHot Sweet Chili Sauce..........beautimous meal on our 47th wedding anniversary!

I let the cutlets rest in the oven at 170 degrees F. while I finished the corn and broccoli of which I had a little trouble getting everything to come together.......some days things like that just happens!  The milk in the ingredients pix is not needed for this recipe but used in the cheese sauce for the broccoli!
