Fried Okra

FRIED OKRA

INGREDIENTS:

2 pounds okra, sliced 1/2 inch thick
3/4 cup yellow cornmeal
3/4 cup all-purpose flour
1 cup whole buttermilk
1 teaspoon Morton table salt
1/2 teaspoon freshly ground black peppercorns (Tellicherry)
1 teaspoon Wild Bill's Meat Rub
Oil for frying

Heat oil in a heavy bottom skillet, Dutch oven or deep fryer to 350 degrees F.  Combine cornmeal, flour and seasonings in a shallow flat bottom pan.  Place cut okra in buttermilk and let soak a few minutes, drain and place okra in the coating mixture, evenly coating the okra.  Fry in hot oil until golden brown; about 4 to 5 minutes.  If necessary, fry okra in batches.  Elevate deep fryer basket and allow to drain and if using a skillet, remove okra and place on paper towels to drain.  Serve while hot with your favorite sides.

YIELD:  8 servings

Above fried okra prepared on 08-01-17 and was off the chain good.  My bride said this was the best okra she had ever eaten.  One of my brides sisters Sue Newton, brought by several pounds of fresh okra and couldn't miss a chance to prepare enough for my bride and myself.  I blanched the okra in hot water for five minutes, but that isn't necessary unless you plan to freeze if, of which I froze more than half of it for later usage.

I deep fried the okra in four small batches, elevated the basket, drained and transferred the deep fried okra to a container with paper towels and lightly tented until all four batches were completed.  This is a fairly generic recipe from the internet, with the exception of my own house seasoning mix which I call, Wild Bill's Meat Rub and of course freshly ground black peppercorns (Tellicherry.)  My bride chastises myself aka chin music sometimes for going overboard by adding too much Wild Bill's Meat Rub to some of my recipes.  Since her stroke 10 plus years ago, she cannot tolerate spicy foods anymore.

My Grandma Coley and Mom, for many years fried okra in a large cast iron frying pan and the flour and cornmeal mixture created a beautiful texture on the fried okra.  I am not saying this is as good as my Grandma Coley's and Mom's fried okra, but it certainly will give it a run for the money!

It is wonderful that we have pleasant memories from the past and I am thankful for each and every day that our Lord Jesus Christ allows.
