Yellow Rice

YELLOW RICE

INGREDIENTS:

1 cup long grain rice (Mahatma brand is my favorite inexpensive white rice)
2 cups water
1/2 teaspoon Kosher or Sea salt
1/2 teaspoon turmeric
butter, oil or shortening (optional)

Place a medium size sauce pot over high heat and add water, salt and turmeric.  Bring to a boil.  Add rice and stir rice and place tight fitting lid on pot and reduce heat to low.  Simmer with lid on pot for 20 minutes and/or until all liquid is absorbed from rice.  If you desire less sticky rice, add a small amount of oil or butter to the boiling water.

Remove from heat and serve immediately with your favorite sides. 

This is commonly called "Poor Man's Saffron Rice" since you use the turmeric for coloring instead of Saffron, which is the Worlds' Most Expensive Spice.  If you desire a more expensive long grain white rice from India, purchase Basmati rice and less expensive Jasmine rice from Thailand which has similar flavor and texture to the Basmati rice.
