Venison Sloppy Joes

2 pounds ground Venison, no fat added
2 tablespoons Extra Virgin Olive Oil
1/2 cup Green Bell Pepper, diced
1/2 cup Red Bell Pepper, diced
1 cup Vidalia Onion, diced
1 cup Ketchup
1/4 cup Water
1 Tablespoon Brown Sugar
1 teaspoon Chili Powder
1 Tablespoon prepared Mustard
1/2 teaspoon Garlic Powder or 2 cloves of fresh garlic, minced
1/2 teaspoon Wild Bill's Meat Rub
2 teaspoons Morton Table Salt
2 teaspoons Worcestershire Sauce
1/2 teaspoon fresh Ground Black Peppercorns (Tellicherry)
1 can Campbell's Cheddar Cheese Soup
6 Kaiser Rolls or bread of your choice

Place a large skillet on medium heat; add olive oil, ground venison and cook until brown.  Add bell pepper, garlic, onions and continue to cook with lid on skillet until vegetables are tender; about 10 to 15 minutes.  Add ketchup, prepared mustard, water, brown sugar, Wild Bill's Meat Rub, salt, Worcestershire sauce, black pepper and Cheddar Cheese soup; stir to combine and simmer an additional 10 minutes uncovered to marry flavors and reduce liquid.  Stir every few minutes to keep from sticking.  Adjust seasonings as needed.

Heat Kaiser rolls in skillet or microwave for 15 seconds and spread Mayonnaise or your favorite condiment on each Kaiser roll and spoon Sloppy Joe mixture on one side of the roll.

Serve while hot with fries, chips or whatever condiments you desire.

YIELD:  6 servings
