TWEET'S PUMPKIN PIE

INGREDIENTS:

       2 refrigerated 9" pie crust dough                         6 eggs
       2 cans (15 oz.) pumpkin puree or 4 cups     1 3/4 cups sugar
1 1/2 cups evaporated milk                                         1 teaspoon ground ginger
       1 teaspoon ground cinnamon                           1/2 teaspoon salt
    1/4 teaspoon ground cloves                                1/4 teaspoon nutmeg
       2 tablespoons all-purpose flour                           2 teaspoons McCormick pumpkin spice
          Cinnamon for garnishing (optional)                     Sweetened Whipped Cream

Preheat oven to 350 degrees F.  Fit pie crusts into two 9" pie pans: fold edges under and flute.  Freeze until firm, about 15 minutes. In large bowl whisk together pumpkin, sugar, milk, eggs, cinnamon, nutmeg, ginger, salt, flour, pumpkin spice and cloves until well blended.  Divide mixture between crusts.  Bake 1 hour or until centers are set.  Cool completely on wire rack.  Garnish with whipped cream sprinkled with cinnamon if desired.

YIELD: 2 pies, 8 servings each.

I did a retake of some pixs of the pumpkin pie that I baked today on 04-18-13.  My bride enjoyed the slice of pumpkin pie above after the photographs were taken.  The following sequence pixs were taken on 02-16-09 of a couple pumpkin pies my bride baked on 02-16-09 except for the last three pixs that were taken on 04-18-13.

NOTE:  Currently, I am using the Pillsbury brand frozen deep dish pie crusts and will pre-bake them in a 400 degree F. oven for 10 minutes.  Prick the bottom of the pie crust with the tines of a fork to keep the crust from rising up (blistering) off the aluminum pie pan.  You can use pie weights to hold the frozen shell in place against the aluminum pie pan if desired.
