Tuna Salad

TUNA SALAD

INGREDIENTS:

17 oz. drained tuna (13 oz. net) water packed
1 cup celery, diced
1 cup onions, diced
1/2 cup sweet salad cubes, drained (Mt. Olive) brand pickles
1/2 cup Dukes mayonnaise
1 teaspoon white granulated sugar
1/4 teaspoon celery salt
1/4 teaspoon seasoned salt
1/4 teaspoon Wild Bill's Meat Rub
1/4 teaspoon freshly ground black peppercorns (Tellicherry)
5 hard boiled eggs, chopped coarse

Mix all the above ingredients in a medium size mixing bowl.  Serve with your favorite condiments.

YIELD: 4 to 6 servings

Above Tuna Salad prepared on 03-29-19. 

My bride aka Joyce related to me a few days ago, that we had not had any tuna salad in a good while and I told her I would fix some for us.  She also stated that tomato wedges would be good with the tuna salad also.  I normally don't go by a recipe for our tuna salad, but just add the basic ingredients.  However today, I decided to write down some measurements for the recipe and web publish it.

The above tuna salad makes a good sandwich; bread of your choice slathered with mayo, sliced tomato, lettuce, mild banana peppers and a good helping of the tuna salad.
