Tuna Casserole

TUNA CASSEROLE

INGREDIENTS:

24 ozs. drained tuna
1 cup milk
2 cans Cream of Mushroom Soup (10 ¾ oz can.)
2 cups cooked or frozen peas
4 cups cooked medium noodles (8 oz. package)
3 tablespoons melted butter
3 tablespoons bread crumbs or 18 Ritz Crackers crushed fine
1 teaspoon Wild Bill's Meat Rub

Mix tuna, soup, peas, milk and noodles and Wild Bill's Meat Rub in a 3 Qt. Pyrex or equivalent oven proof dish and place in a 400 degree oven for 25 minutes.

Mix melted butter with bread crumbs or Ritz Crackers crushed and sprinkle over top of casserole and bake an additional 10 minutes until golden brown. 

YIELD:  8 to 10 servings

Above tuna casserole baked on 05-13-13.  I cut the recipe in half but used more peas since there was about 1 1/2 cups in the canned peas.

Below is pix of the tuna casserole using regular macaroni elbows instead of noodles.  Had plenty on hand and needed to use up and also cut the recipe in half using a 8 inch square Pyrex baking dish instead of a 13x9x2 baking dish.  Used 3 cups of cooked macaroni small elbows and added a sprinkling of salt and fresh ground pepper corns to the mixture.

I don't remember where I obtained this recipe but it is a quick and simple dish to complete.  You can substitute chicken breast for the tuna if you like.
