TOMATO PIE

INGREDIENTS:

2 pre-baked deep dish pie crust
3-4 medium garden fresh tomatoes
1 cup Duke's mayonnaise
8 oz. Sharp Cheddar Cheese, shredded
8 oz. Monterey Jack Cheese, shredded
8 oz. Parmesan Cheese, shredded
4 oz. Diced Pimentos, drained
1/4 Vidalia Onion, grated (use sweet onion if Vidalia onions are not available)
Dijon Mustard, for basting
Garlic Powder, to taste (1/4 tsp. estimate)
Black Pepper, to taste (see notes below)  (1/4 tsp. estimate)
Kosher Salt, to taste (probably don't need extra salt since you salt the tomatoes down per the instructions below)
Basil for garnish (see notes below)

Baste pie crust with Dijon Mustard, prick the bottom of the pie crust with the times of a fork to keep the pie crust from rising up (blistering) off the aluminum pie pan and place in a 400 degree F. oven for 10 minutes.  You can use pie weights to hold the frozen shell in place against the aluminum pie pan if desired.  Remove browned pie shells from the oven.

Reduce oven temperature to 350 degrees F.  Slice tomatoes to desired thickness and lay them flat on a paper towel.  Sprinkle with salt to absorb some moisture.  Let sit 5 to 10 minutes, then pat tomatoes gently with paper towels not to squish.

In a large bowl combine: Sharp Cheddar, Parmesan, Monterey Jack, mayo, pimentos, onion (grated), garlic powder, black pepper. Mix well. Baste pie crusts again with Dijon Mustard and start layering, tomatoes then the pimento cheese mixture.  Bake 20 minutes, then broil for 2 minutes until top perfectly brown.

Top with chopped basil and enjoy.

YIELD:  2 pies, eight slices each

Recipe from Katie Seawell and Wanda Howard on 07-19-2023.  Rachel and Wink Myers shared a couple slices of the tomato pie with me and the tomato pie was "off the chain good!"

NOTES:  I used freshly ground black peppercorns (Tellicherry) and 1/2 teaspoon of my Wild Bill's Meat Rub to the pimento cheese mixture.  I also layered chopped basil and chopped green onions on top of the tomato slices before adding the pimento cheese mixture.

The tomato pie was outstanding.  It was just a little on the salty side since I "guesstimated" at the amount of salt and cut the salt quantity from 1/2 tsp. to 1/4 tsp. and updated the recipe above, however I don't think you need to add additional salt since you salt the tomatoes and pat them dry in order to remove excess moisture from the sliced tomatoes..

I also used glass marbles for pie weights and they worked real well.
