Spaghetti Casserole

SPAGHETTI CASSEROLE

INGREDIENTS:

16 Oz. spaghetti (cook per package directions) and drain well
1 lb. ground beef or ground venison (no fat added)
1 jar 24 oz. jar Spaghetti sauce (used Newman's Own Sockarooni)
2 tablespoons extra virgin olive oil (if using ground venison)
2 garlic cloves, minced
1 teaspoon salt
1/2 teaspoon freshly ground black peppercorns (Tellicherry)
1 teaspoon Wild Bill's Meat Rub
1/2 teaspoon ground basil
1/2 teaspoon Italian seasonings
1/2 teaspoon dried oregano
1 cup red onion, diced
1 red bell pepper, diced (reserve 1/4 cup for garnish)
4 green onions, chopped (reserve 1/4 cup for garnish)
8 oz. cream cheese
8 oz. cottage cheese
8 oz. sour cream
2 cups grated extra sharp cheddar cheese
1 cup grated Monterey Jack cheese

Preheat oven to 350 degrees F.  Prepare pasta per package directions.  Add 2 tablespoons extra virgin olive oil to a large 13 inch skillet if using ground venison over medium heat.  Omit olive oil is using ground beef.  Add meat, onions, garlic, bell pepper, salt, black pepper, oregano, Italian seasonings and cook until meat is brown.  If using ground beef, drain excess fat and liquid.  Add your favorite spaghetti sauce and simmer for 5 minutes.

While pasta is cooking, using a medium size bowl, combine cream cheese, cottage cheese, sour cream and diced green onions.

Lightly spray a 9 x 13 baking dish with vegetable oil.  Add 1/2 of the cooked spaghetti to the baking dish; add 1/2 of the cream cheese, cottage cheese, sour cream and green onion mixture; add 1/2 of the meat sauce mixture.  Add 1/2 of the graded Monterey Jack cheese.  Add the balance of the spaghetti, cream cheese mixture and meat sauce mixture.  Top with the balance of the Monterey Jack cheese and 2 cups or more of extra sharp cheddar cheese.

Place in oven for 20 to 30 minutes until cheese is melted and bubbly.  Garnish with red bell pepper, green onion and/or chopped parsley.  Serve while hot with a tossed salad and garlic bread or sides of your choice.

YIELD: 12 servings

Above Spaghetti Casserole prepared on 04-14-17 and "was off the chain good."  This recipe will definitely remind you of LasagnaRegular spaghetti doesn't compare to this recipe and just as easy to prepare.  You can use two 8 x 8 baking dishes and freeze one for later usage.

I did let the spaghetti rest for about 30 minutes to tighten up for a better photograph.

My bride enjoyed this spaghetti casserole and stated, "that it looked like a Christmas casserole with the red and green color garnish".....grin if you must!  The next day, I shared a couple servings of the spaghetti casserole with one of my friends Calvin Jones, and he said, "he believed it was the best spaghetti he had ever had!"  A couple servings were also given to our two daughters to do some serious sampling as well.
