Shrimp Fettuccine Alfredo

SHRIMP FETTUCCINE ALFREDO

INGREDIENTS:

1/4 lb. butter                                                                                          8 oz. package cream cheese
1 teaspoon garlic powder                                                                   1 pint heavy whipping cream
1 teaspoon Morton salt (to taste)                                                    1/8 teaspoon fresh ground black peppercorns (Tellicherry)
1/8 teaspoon cayenne pepper                                                      1 lb. Fettuccine
1 cup grated Parmigiano Reggiano cheese                                       Wild Bill's Meat Rub (to taste)
1 lb. uncooked shrimp, deveined and peeled, tails on optional     2 green onions with tops, sliced
2 cloves garlic, diced fine (about 2 teaspoons)                               1 tablespoon fresh squeezed lemon juice
3 tablespoon butter                                                                             2 tablespoons fresh chopped parsley
3 tablespoons olive oil                                                                    1/4 cup green bell pepper, diced
1/4 cup red bell pepper, diced                                                       1/4 cup yellow bell pepper, diced

In a medium saucepan melt 1 stick of butter; do not substitute margarine.  Once butter is melted add cream cheese and when the cream cheese is softened add the heavy whipping cream.  Season with garlic powder, salt, fresh ground black pepper and a pinch of cayenne pepper and simmer mixture on low heat (sauce should be bubbling) for 15 to 20 minutes stirring constantly and adjust seasonings as needed.  Once sauce is thickened, remove from heat and stir in the Parmigiano Reggiano cheese which should be at room temperature also. 

Cook fettuccine as directed on the box which is about 12 minutes boiling uncovered for al dente (cooked enough to be firm but not soft) and drain using a colander right before usage. 

Place peeled and deveined shrimp in a bowl; sprinkle a light coating of Wild Bill's Meat Rub over shrimp and drizzle fresh squeezed lemon juice over shrimp, mix thoroughly and set aside.

About 10 minutes prior to the completion of fettuccine and Alfredo sauce, place a medium skillet on medium heat and melt 3 tablespoons of butter and 3 tablespoons of olive oil.  Add the bell peppers and sauté about 5 minutes; then add garlic and green onions; sauté another 3 minutes.  Add the shrimp and chopped parsley and sauté about 1 to 2 minutes until shrimp are pink and flesh is opaque.

To serve, drain fettuccine and add to plate.  Ladle Alfredo sauce over the fettuccine and lightly mix.  Add 1/4 of the shrimp mixture to the fettuccine and Alfredo sauce.  Garnish with additional chopped parsley, grated Parmigiano Reggiano Cheese and green onions if desired.  Drizzle fresh squeezed lemon juice over shrimp if desired.  Serve with a side of tossed salad and/or asparagus spears and home made garlic bread.  A good glass of chilled NC ice tea will complement this excellent meal.

YIELD:  4 servings

This recipe is an adaptation of my Charleston SC style shrimp n grits and Mickey's Chicken Alfredo recipes.  No trip necessary to your favorite Seafood or Italian Restaurant for similar cuisine ....this is as good as it gets!  This recipe is totally awesome.  Served with a tossed salad and garlic toast and was "off the chain good."  I actually used 1 and 3/4 lb. shrimp since I had plenty of frozen shrimp and didn't want them to freezer burn.  I am sure if you get creative, you could do this recipe in a single large skillet instead of two separate skillets and pasta pot. 

NOTE:  Do not use Kraft Grated Parmesan cheese in the green canister otherwise your Alfredo sauce will not taste right.  I used Parmigiano Reggiano Cheese that was made in Italy which has a wonderful rich and robust flavor and grate only what you need!
