SALMON CHEESE LOG

INGREDIENTS:

1 Can Pink Salmon (14.5 oz.)
1 8 oz. packaged cream cheese, softened
1 Tablespoon lemon juice
1 teaspoon prepared horseradish
2 teaspoons grated onion (Vidalia if available)
1/4 teaspoon Wild Bill's Meat Rub (optional)
1/4 teaspoon freshly ground black peppercorns (Tellicherry) optional
1/4 teaspoon salt
1/4 teaspoon Liquid Smoke
1 cup chopped pecans (toasting is optional)
4 Tablespoons chopped parsley

Drain Salmon, remove skin and bones.  Flake salmon into a medium size bowl.  Add softened cream cheese, lemon juice, grated onion, prepared horseradish, salt and liquid smoke.  Mix well until combines.  Cover and chill at least 3 hours.

Combine nuts and parsley on a large sheet of wax paper.

Divide salmon mixture into halves.  Shape into logs about 7 inches long.  Roll each log in nut/parsley mixture.  Pat the ends in the nut mixture.  Wrap in wax paper and twist ends.  Wrap each wrapped log in aluminum foil and twist ends.

Store in refrigerator until ready to serve with crackers of your choice.

YIELD:  2 logs about 7 inches in length

The salmon cheese log was awesome, severed over a Ritz cracker. The texture with the pecans was off the chart! 

Above prepared on 08-17-2023 with the help of my bride aka Joyce doing the forming of the log.  I tasted the salmon cheese mixture before placing in the refrigerator and it was excellent!

This recipe was sent to me from Tammy Smit.  There are many variations on the internet for the salmon cheese log and you can add additional ingredients as desired.
