Rotisserie Chicken

ROTISSERIE CHICKEN

INGREDIENTS

Whole chicken 3 to 5 lbs.
2 tablespoons Crisco vegetable oil or peanut oil
1 tablespoon Wild Bill's Meat Rub or rub of your choice
2 cups Swanson Chicken Broth (less sodium)
1/4 cup Crisco vegetable oil for browning chicken
2 tablespoons corn starch (for roux)
Salt as needed (for roux)
Freshly ground black peppercorns (Tellicherry) for roux

Rinse off chicken under cold water.  Remove any giblets from chicken cavity if present.  Dry chicken on paper towels.  Rub chicken down with Crisco vegetable oil.  Coat entire chicken with Wild Bill's Meat Rub or rub of your choice.  Let chicken sit out at room temperature for at least 30 minutes.  Binding the legs together with butchers twine makes it easier to get the chicken out of the Instant Pot.

Turn Instant Pot on and set to sauté mode.  Brown chicken on all sides and remove from the Instant Pot.  Add 2 cups chicken broth to the pot and scrape residue from the bottom of the pot.  Insert wire basket into the Instant Pot and place chicken on top of the wire basket.  Check the safety valve on the Instant Pot to ascertain it is working; easily moves up and down.  Place lid on Instant Pot and set mode to pressure and steam lever to steam.  Set timer for 24 minutes for a 3 pound chicken and add 1 minute per pound over 3 pounds.  When the timer goes off, do a quick release of the steam lever.

Remove chicken from the Instant Pot, placing tongs inside the body cavity or getting hold of the butchers twine and place chicken on aluminum lined baking pan under oven broiler for 5 minutes to brown the chicken skin if desired.  Additional browning under the broiler is optional.  While chicken in browning under the oven broiler, mix 2 tablespoons corn starch with 1/4 cup cold water in a pint jar and shake well to mix the corn starch and water.  Set Instant Pot to sauté mode, pour corn starch mixture into the chicken broth and cook about 5 minutes to thicken the chicken broth for a light gravy aka roux.  Add salt and pepper to taste as needed.  Normally, the chicken broth has enough sodium present.

Serve while hot with your favorite sides.

YIELD: 4 to 6 servings

I believe the romaine lettuce is way past its prime too, but "milked" it for a few recipes.

Above Rotisserie Chicken prepared on 03-28-19 and would literally fall off the bone. It was tender, succulent and outstanding!  This Instant Pot Rotisserie Chicken is just as good taste wise as my Sprite Can Chicken and takes 2/3 less time to cook/prepare.  You do lose a bit of eye appeal using the Instant Pot on some recipes because of the steam factor in my humble opinion, however the positive out weighs the negative. 

I served the rotisserie chicken with mashed potatoes, steamed corn on the cob, string beans, carrots and garlic bread.  I didn't do a photo of the plated chicken; too much going on at one time today.  Not doing a good job of multi-tasking today......grin if you must!

I made a roux, however it was far too spicy (too much cayenne pepper kick) as I apparently coated the chicken with a serious coating of Wild Bill's Meat Rub.  The steam released a good amount of the rub into the broth.  The next time I do this recipe, I will not be so aggressive with Wild Bill's Meat Rub.

NOTE:  There definitely is not any rotating of the chicken going on with this recipe, therefore it must get its name because the final product does look like Rotisserie Chicken which hasn't been mummified!
