RACHEL SANDWICH

INGREDIENTS:

5 ounces sliced roasted turkey breast
2 slices sourdough bread (your choice French, Italian, wheat, rye, etc.)
2 tablespoons Russian or Thousand Island dressing
3 thin slices Swiss cheese
1/4 cup Classic Deli Slaw  (Cranberry Chutney) if served during the Holidays) or anytime you desire
4 tablespoons unsalted butter

Heat griddle or large skillet over medium-high heat with 2 tablespoons butter.  Assemble sandwich with one and one half slices of cheese on each slice of bread.  On one slice of bread only, add roasted turkey breast slices, slaw and dressing.  Place other slice of bread with the cheese slices on top.  Place in the skillet and toast until golden brown.  Add remaining two tablespoons of butter to skillet and toast the other side until golden brown brown about 3 to 4 minutes which will warm the turkey slices and melt the cheese.  This sandwich is commonly referred to as the "Sister" to the Rueben sandwich.

Serve with your favorite condiments.

YIELD:  1 sandwich

Above sandwich prepared on 11-23-16 using some left over deep fried turkey.  Normally, you probably would not want turkey slices that thick.....it was "beautimous" tasting for sure.

This recipe was inspired by Hope LeVan, bride of Ken LeVan of Shunk, Pa.  Ken said they made the Russian Dressing from scratch and used it instead of the Thousand Island Dressing.  Cranberry Chutney was also used which really compliments the roasted turkey.  I will certainly use those ingredients on the next ones that I do.   Below pix of Hope LeVan and daughter Phoebe in front of their restaurant "The Bleu Plate Cafe" in Lewisburg, Pa.
