TWEET'S PUMPKIN PIE

INGREDIENTS:

       2 refrigerated 9" pie crust dough                         6 eggs
       2 cans (15 oz.) pumpkin puree or 4 cups     1 1/2 cups sugar
1 1/2 cups evaporated milk                                         1 teaspoon ground ginger
       1 teaspoon ground cinnamon                           1/2 teaspoon salt
    1/4 teaspoon ground cloves                                 1/4 teaspoon nutmeg
          Cinnamon for garnishing (optional)                     Sweetened Whipped Cream

Preheat oven to 350 degrees F.  Fit pie crusts into two 9" pie pans: fold edges under and flute.  Freeze until firm, about 15 minutes. In large bowl whisk together pumpkin, sugar, milk, eggs, cinnamon, nutmeg, ginger, salt and cloves until well blended.  Divide mixture between crusts.  Bake 1 hour or until centers are set.  Cool completely on wire rack.  Garnish with whipped cream sprinkled with cinnamon if desired.

YIELD: 2 pies, 8 servings each.
