ANN PORTER'S OLD TIMEY POTATO SALAD

INGREDIENTS:

5 pounds Russet potatoes, diced    10 boiled eggs, chopped
2 large onions, chopped                  3/4 cup sweet salad cubes (Mt. Olive) brand pickles
3/4 pint Dukes Mayonnaise                1 teaspoon sugar
1 tablespoon salt - to taste                 2 teaspoons freshly ground black peppercorns - to taste (Tellicherry))
3 ozs. pimento                                     1 teaspoon white vinegar - to taste

Boil pealed and diced potatoes until done and still firm; start testing the boiled potatoes after 12 minutes of boiling.  Drain and let cool.  Add potatoes, eggs, sweet pickles, pimento, sugar, salt, pepper and Duke's Mayonnaise and mix well. This is one of those recipes that you mix and taste and then add what ever it needs for flavor.  The above amounts of seasonings will get you close though, however you will need to "tweak" the mayonnaise, salt, pepper, and vinegar to taste.  I usually garnish the top with a light "dusting" of Paprika for additional color.

Note: This potato salad is so good that it is steadily requested when we have our holiday covered dish "get together."  My bride "Tweet" uses this recipe along with other members of the family.  If Dukes brand of mayonnaise is not available in your area, use a good quality of mayonnaise, not the low-cal, watered down or salad dressing type.
