POOR MAN'S CAVIAR

INGREDIENTS:

Roe from fish of your choice
1/2 cup House - Autry Seafood Breading Mix
1/2 cup Moss's Seafood Breader or Lakeside Seafood Breader
2 teaspoons Morton table salt
1 teaspoon freshly ground black peppercorns (Tellicherry)
Vegetable oil for frying

Leave fish eggs (roe) in membrane.  Heat oil in a deep walled skilled to 350 degrees F.  Mix 1/2 cup of House- Autry seafood breading mix, 1/2 cup Moss's seafood bread, 2 teaspoons salt and 1 teaspoon freshly ground black peppercorns in a one gallon zip-lock type bag.  Place fish roe in zip-lock bag and shake to evenly coat.  Fry roe in hot oil until golden brown.  Within a minute or two, roe will float to the top of the oil.  Do not over cook, or roe will be tough and dry.  Remove roe and drain on paper towels.  Serve with sides of your choice; e.g., hush puppies, coleslaw, French fries, etc.

YIELD: 6 to 12 roe per person, depending on the size of the roe.

Above Crappie roe was outstanding!  My bride passed on the roe and stayed with the fried Crappie and Bream aka Sunfish instead.

The first time I had fish roe if memory is correct, was sometime in the early 1960s.  I had breakfast with my Aunt Hattie Coley's brother Henry Price, who I mention in my short story titled BrownieI can't remember if the roe aka eggs were in grits or scrambled eggs.  Henry would catch catfish that would have very large roe membranes and good sized eggs ideal for eating.

This is a long way from Beluga Sturgeon caviar, of which the individual eggs are removed from the membrane, then salted and packed in tins for sale.  My pockets are way too shallow to partake of imported and/or domestic processed caviar, whereas my deep fried caviar will work just fine.  I will not make it into the circles of the social elite with this home grown unorthodox delicacy, but I guarantee you, I have far much more fun.....grin if you must!  Then again, eating Escargot and Calamari might not be that bad either!  Mountain and Southern folks consume Rocky Mountain Oysters and that definitely is getting off the grid in my humble opinion!

The deep fried Crappie and Sunfish roe is very tasty with its own unique flavor and not "fishy" tasting as one might think.
