Pickled Peaches

PICKLED PEACHES

INGREDIENTS:

5 lbs. small firm "cling" or clingstone peaches
2 cups sugar
1 pint dark vinegar
2 tablespoons whole allspice

Peel peaches.  Put peaches in a baking disk and coat peaches heavily with sugar.  Place a piece of cheese cloth over the top of peaches and let sit all night.  Using a 3-quart saucepot, add vinegar and allspice which has been tied up in a piece of cheese cloth and cook peaches a few at a time in the syrup until they are tender but no mushy.  Place peaches one at a time into sterilized quart mason jars and add enough syrup to cover.  Seal jars.

Recipe from Ann Porter.  I remember Grandma Coley making the pickled peaches but did not pay any attention as to how they were actually made.  I do remember they were very sweet, spicy and tasty.  Mickey Porter March 5, 1999.

Above pickled peaches prepared by Aunt Mollie Bowers of Burnsville, NC recently.  During a visit on November 3, 2015, she gave me a "care package" to bring home as she calls it of several things she had canned along with some whole sweet potatoes which will no doubt end up in a pie or a soufflé and a big chunk of home made pound cake using all the ingredients that makes her pound cake off the chart!  Aunt Mollie said the peaches were not as firm this year for this type of recipe but they are still "beautimous" nevertheless.  My bride and myself enjoyed those peaches this afternoon and were awesome tasting.

Aunt Mollie Bowers doesn't use the "cling" peaches.....she said they were difficult to get them to turn loose from the seed even when cooked until the peach is tender.  She will purchase a bushel of regular peaches and select the smaller ones before they get too ripe to use for her pickled peaches as she calls them.

I have milked my mint plant pretty good lately using it for decor on my persimmon pudding recipe, making Mint tea near bedtime and with this recipe.  The cherries used in the photos were a Christmas gift that are soaked in Ole Smoky Brand Tennessee Moonshine and added a good color splash and/or eye candy to the peaches for the camera lens to feast on......grin if you must!
