PECAN PIE

INGREDIENTS:

2 tablespoons flour (self-rising)       1/2 cup sugar (white granulated)
1 teaspoon vanilla                          1/2 cup brown sugar
1 egg                                            1/2 cup milk
1 cup pecans, chopped                  1/4 cup margarine (melted)
1 9 inch unbaked pie shell (regular depth) - Pillsbury brand preferred SEE NOTES BELOW

Preheat oven to 325 degrees F.  Beat egg slightly.  Add sugars, vanilla, flour, milk, pecans and melted margarine.  Mix well.  Pour into unbaked pie shell (see notes below) and bake at 325 degrees for 50 minutes.  The pecans will float and form crust on top if the pie is baked slowly.

This recipe is exceptional and does not have all the sweetness of a standard pecan pie using corn syrup.

Recipe from Mrs. Ben Tucker, via Melba Steele of Cason's Old Field, North Carolina

Above pecan pie baked on 03-29-17 and was "off the chain good."  I used a deep dish frozen Pillsbury pie crust, of which a regular depth is needed for this recipe.........my bad!

NOTES:  Preheat oven to 400 degrees F.  Prick the bottom of the pie crust with the tines of a fork to keep the crust from rising up (blistering) off the aluminum pie pan.  You can use pie weights to hold the frozen shell in place against the aluminum pie pan if desired and bake pie crust for 10 to 12 minutes.  I always bake the frozen pie shells which lightly browns the bottom of crust and the edges.  These notes were not in the original recipe and added by yours truly, Bill aka Mickey Porter.

Below pix of Blakney and Melba Steele taken 12-16-82; both are deceased.

Both Blakney and Melba Steele were hard working people and I enjoyed visiting with them back in the early 80s at their farm in Cason's Old Field, NC.  Blakney was my mentor at the Anson Correctional Center in Polkton, NC when we both worked there.  There is additional information about Blakney and Melba Steele at this link.  I miss both of them.
