PECAN CRUSTED TROUT WITH ORANGE ROSEMARY BUTTER SAUCE

INGREDIENTS:

4 (6 to 8 oz.) trout fillets
1 cup all-purpose flour
2 cups pecans
4 eggs whites, beaten
1 1/2 cups orange juice, fresh
1 cup Dry Sherry
1 cup chopped shallots or green onions with tops
1/4 cup rice vinegar
1/2 lemon, juiced (about 1 1/2 tablespoons)
1 fresh thyme sprig
1/4 cup fresh parsley (about 8 large stems)
2 rosemary sprigs, fresh
1/4 cup whipping cream
2 sticks unsalted butter cut into small pieces (reserve 1/4 stick)
4 tablespoons Extra Virgin Olive Oil
1/2 teaspoon Wild Bill’s Meat Rub
1/4 teaspoon freshly ground black peppercorns (Tellicherry)
1 teaspoon Morton Table Salt (to taste)
1 large carrot, peeled and julienne
1 red bell pepper, thinly sliced lengthwise
6 cups savory or green cabbage

Add orange juice, Sherry, shallots, rice vinegar, lemon juice, thyme and parsley to a medium sauce pan over medium high heat and boil for 10 minutes.  Add rosemary and boil about 10 minutes until liquid is reduced to 1/2 cup.  Strain sauce into another clean saucepan, add whipping cream and bring to a boil.  Reduce heat to low and whisk in 1 and 1/2 sticks of butter one tablespoon at a time.  Add Wild Bill’s Meat Rub and salt and pepper to taste.  Remove from heat and let stand at room temperature for an hour.

Combine pecans and 1 tablespoon flour in food processor.  Grind pecans finely; transfer to flat bottom plate.  Place remaining flour on another plate.  Sprinkle fish with freshly ground black peppercorns, salt and a light dusting of Wild Bill’s Meat Rub. Dip each fillet into flour to coat and shake off excess.  Using a pastry brush, coat flesh side of each fillet with the beaten egg white and place meat side down onto pecans and press to coat with the pecans.  Transfer fish fillets to waxed paper-lined baking sheet, pecan side down and place in refrigerator to chill about 15 minutes.

Place a large heavy bottom skillet over high heat and add 2 tablespoons olive oil and 2 tablespoons of butter.  Add julienne carrot and bell pepper; sauté about 2 minutes.  Add cabbage; sauté until cabbage wilts, about 4 minutes.  Season the veggie mixture with salt, freshly ground black peppercorns and a light dusting of Wild Bill’s Meat Rub. Remove from heat.  Melt 1 tablespoon butter with 1 tablespoon olive oil in large heavy bottomed skillet over medium-high heat.  Place 2 fillets, pecan side down, into skillet. Cook until crust is golden brown and crisp, about 2 minutes. Using spatula, gently turn fillets over.  Cook until just opaque in center, about 2 minutes. Transfer to plate and repeat with remaining butter, olive oil and fish.

To serve, heat sauce over low heat to warm and divide vegetables among plates. Top with the fish and spoon sauce around the veggie mixture and fish. Garnish with fresh chopped parsley and a lemon wedge.
