PASTRAMI ON RYE SANDWICH

INGREDIENTS:

8 to 10 ounces sliced Pastrami
2 slices sharp cheddar cheese
2 slices butter toasted Rye bread
2 tablespoons butter
2 slices red onion, separate rings
2 teaspoons yellow mustard
Romaine lettuce, optional

Add 2 tablespoons butter to a large skillet on medium heat.  Toast 2 slices of rye bread. Slather mustard onto one side of each slice of Rye bread.  Add Romaine lettuce on top of one slice of bread. Layer slices of Pastrami onto lettuce; add red onion rings and top with two slices or more of cheddar cheese.  Place other slice of Rye bread on top.  Place a couple long toothpicks into sandwich and slice diagonally.  Serve with your favorite sides.  Pastrami sandwich goes very well with potato chips, French fries and Kosher pickle slices.

YIELD: 1 large sandwich

The first time I ever heard of a Pastrami on Rye sandwich was in 1964 when I was in the US Navy boot camp in Great Lakes, Illinois.  Our Northern aka Yankee fellow trainees talked about the Pastrami on Rye with mustard sandwich like it was a gift from Heaven.  Being from North Carolina and living in a One-Horse Town, sandwiches like the Pastrami on Rye, Reuben, Philly Cheese Steak, Rachel, Liverwurst and onion on Rye and other Deli sandwiches were all Greek to me.  I don't think I ever had a real pan pizza unless it was the square slices the school cafeteria served during my high school years.

The armed forces has a way of manifesting many things to a boy aka young man exposing one to various cuisines and cultures from around the world which can be a good thing!

I make the Pastrami on Rye Sandwich every once in a while and finally got around to adding it to my Sandwiches Recipe section.  BTW, I consumed about 3/4 of the above sandwich and placed the balance in a zip lock type bag for a later snack.  My bride opted for a couple regular tomato sandwiches.  The above Pastrami On Rye is a meal within itself!

I added the onion, cheese and lettuce for a little "eye candy" for the camera and you can add whatever you want but just plain Pastrami on Rye with mustard is pretty much traditional.
