ONE EYED JACK

INGREDIENTS:

1 egg
1 tablespoon butter or bacon drippings
1 slice bread
Kosher or Sea Salt (to taste)
Freshly ground black pepper corns (Tellicherry) to taste
Louisiana Hot Sauce (optional)
Fresh chopped parsley (optional)

Heat butter or bacon drippings in a skillet over medium heat.  Using a knife or biscuit cutter, cut a circle out of the center of the bread.  Place the bread in the skillet then cook on each side for 1-2 minutes or until golden brown.  Being careful not to break the yolk, crack the egg and pour into the hole of the bread.  Cook for 1-2 minutes then flip and cook for an additional 45-60 seconds.      Remove from skillet, salt and pepper to taste.  Garnish with fresh chopped parsley if desired and serve with your favorite sides; e.g., water ground grist mill grits, country ham, bacon or hot country sausage, orange juice and/or coffee.
