Murray's Meatloaf

MURRAY'S MEXICAN MEATLOAF

INGREDIENTS:

2 lbs. ground beef or ground venison
2 eggs, well beaten
1 cup bread crumbs
24 oz. jar Pace medium or hot Salsa
2 teaspoons Morton table salt
1/2 teaspoon freshly ground black peppercorns (Tellicherry)
1/4 teaspoon Italian seasoning
1 teaspoon Wild Bill's Meat Rub

Mix all ingredients reserving 12 ozs. of Salsa for the topping.  Lightly grease a 9 x 13 inch Pyrex dish and add mixed meatloaf and shape into a loaf. Indent the top of the meatloaf with your fingers and add the balance of the salsa on top.  Place in a pre-heated 350 degree oven and bake for 1 hour.  Allow to sit for 10 to 20 minutes before slicing.  Serve with your favorite sides.

YIELD: 8 or more servings

Above recipe served on 09-03-13 along with Joyce's aka my bride's Cream Cheese Mashed Potatoes and Broccoli n Cheese Casserole.  All three individual dishes were outstanding.  I modified the meatloaf recipe by adding a sautéed veggie medley to use up some left over red, yellow, green and orange bell peppers and white onions.   My bride and I were too hungry to let the meatloaf sit long enough to cut without it coming apart; delicious nevertheless!

This a quick and easy meatloaf recipe and Linda Murray planted the seed for my Quick Fix Venison Chili n Bean recipe by the usage of the salsa since it has everything you need already precut and seasoned.........Murray definitely "Cooks smarter not harder"...grin now.  A few sequence pixs below.  

PS   Linda Murray's original recipe called for 1 lb. ground beef, 1 slice of crumbed loaf bread and 1/2 the other ingredients listed but since I package my own ground venison in 2 lb. vacuum sealed bags the recipe was adjusted accordingly.  Pixs below:
