MOROCCAN MINT TEA
INGREDIENTS:
1 teaspoon Gunpowder Tea (Special Chinese Green Tea) per 5 oz. of
water
1/2 teaspoon Honey per 5 oz. teacup
1 mint leaf per 5 oz. teacup (double or tripe the amount if you
desire)
The water you use to brew your gunpowder tea should be about 70 °C (158
°F) to 80 °C (176 °F) in temperature – not
boiling. Boiling water will just give you burnt tea, which is
unpleasant to drink. You need about 1 teaspoon of the loose tea for
ever 150ml of water (about a standard teacup - 5 ozs. by liquid measure).
The cup or pot you use to brew your tea in should be warm to start with –
the easiest way to do this is to rinse your teapot or cup in warm water just
before brewing your gunpowder tea. Tea should be
steeped for between
2-4 minutes for best flavor. When brewed correctly, gunpowder
tea should taste almost like a mild honey, with a smoky over note and a
slightly coppery but not unpleasant aftertaste. Incorrectly brewed
gunpowder tea may taste acrid, or like slightly bitter water.
For each cup of tea, 1/2 teaspoon of honey and 1 mint leaf should be
added straight after the water is
poured over the tea leaves - the hot water should not be poured straight on
to either of these, as it will ruin the taste.
Tea is traditionally served in glasses, either warm or iced.
My first consumption of Moroccan Mint Tea was between 1965 to 1967 while
stationed in Kenitra, Morocco. Mint Tea was normally served at the end
of a meal like we would serve a dessert here in the States, however it was
great anytime of the day! Instead of served with honey, square
sugar cubes were used as a sweetener.
ADDITIONAL INFORMATION:
Gunpowder Tea is a
Chinese green tea that dates back to the Tang dynasty (about the 8th
century, possibly earlier). It is traditionally a whole-leaf tea,
rolled up into tiny pellets that look, apparently, like gunpowder.
Modern gunpowder tea is rolled by machine, but in the past (and still in
particularly high quality, exclusive brands) it was rolled by hand, into
pellets potentially as small at the head of a pin.
