LAVASH TURKISH BREAD

INGREDIENTS:

1 package active dry yeast (2 1/4 teaspoons)
1 1/4 cups warm water
1 teaspoon salt
1 tablespoon sugar
3 1/2 cups white baking flour
1/2 cup whole wheat baking
2 tablespoons Olive oil
1 tablespoon toasted sesame seeds

In a small bowl or measuring cup, dissolve the yeast and sugar in approximately 1/2 cup of the lukewarm water.  Stir to make sure that yeast dissolves into the water.  Leave until it foams, approximately 10 minutes.  Sift together the flours and salt in a larger mixing bowl and make a well in the center and add the foamy yeast mixture and the remaining water.  Mix with a wooden spoon until dough forms.  On a lightly floured surface, knead the dough until smooth about 10 to 15 minutes.  Hold the dough ball over a large bowl.   Pour the olive oil over the dough and rub to oil the dough ball on all sides.  Oil the bottom and sides of the bowl with the oil that has dripped down.  Place the oiled dough in the oiled bowl and cover with a damp towel.  Place in a warm spot in your kitchen away from drafts.  Let rise for about an hour until dough has doubled in size.  Punch down to release air bubbles and continue to knead for about 5 minutes.  Divide dough into 8 separate balls of dough.  Cover and allow to rise for 30 minutes.  Transfer the dough to a lightly floured counter.  Flatten the small dough pieces with your hands and use a rolling pin to shape into discs or thin rectangles about 12"x10" for large or 8"x6" for small flatbreads.  They should be as thin as pizza dough.  The thicker you leave the discs, the more airy the texture will be. The thinner, the crispier.  Puncture rectangles with a fork and brush dough with olive oil and sprinkle sesame seeds.  Bake in a 400 degree F. oven on baking sheet for 6 to 8 minutes until golden brown.  Continue to bake remaining dough.  To keep warm, place in folded towel.

This is a generic recipe from the internet and most recipes will have the same basic ingredients with various amounts for each ingredient.   This Lavash Turkish Bread recipe is not far from the tortillas recipe on this website using a tortillas mix and various   ethnic groups have very similar flat bread recipes not to offend anyone! 

NOTE:  You can use a bread machine to form the dough.  Follow your machines instructions for kneading dough.  If desired, heat up a non-stick pan over medium heat.  Place dough discs in pan and lightly brown both sides.
