1/2 cup Duke's Mayonnaise
1/3 cup granulated sugar
1/4 cup milk
1/4 cup buttermilk
2 1/2 tablespoons lemon juice
1 1/2 tablespoons white vinegar
Morton table salt
1/8 teaspoon freshly ground black peppercorns
8 cups finely chopped cabbage (about 1 head)
1/4 cup shredded carrot (1 medium carrot)
2 tablespoons minced onion or 1 teaspoon onion powder
Be sure cabbage and carrots are chopped up into very fine pieces (about the
size of rice). Combine the mayonnaise, sugar, milk, buttermilk, lemon
juice, vinegar, salt, and pepper in a large bowl and beat until smooth.
Add the cabbage, carrots, and onion, and mix well.
Cover and refrigerate for at least 2 hours before serving or overnight.
YIELD: 10 to 12 servings
Below coleslaw made using pre-cut cabbage and I coarse grated the
carrots. I like the extra texture of the coleslaw below versus the
above fine shredded/sliced slaw.

NOTES: This is a knockoff recipe of KFC's coleslaw and there
are several versions posted on the internet. I grated the cabbage,
onion and carrot just a little coarser than what KFC's coleslaw is and my
bride commented that she liked mine much better than the KFC. It
certainly did taste like the KFC coleslaw and it was excellent. Served
the coleslaw with a large helping of my
Cornbread with a tall
glass of ice cold water. I used a large carrot that was probably more
than 1/4 cup.

NOTE: Lately, I have been using a bag of precut cabbage for
my coleslaw, grating the carrots and using onion powder instead of minced
