Hubbard Squash Casserole

HUBBARD SQUASH CASSEROLE

INGREDIENTS:

1/2 large Hubbard squash, peeled and cubed (used one gallon zip lock bag of cubed squash)
2 eggs, lightly beaten
1 cup chopped red onion
1/4 cup red bell pepper, chopped
1/4 cup green bell pepper, chopped
2 cups shredded NY Sharp Cheddar Cheese
1 can ( 10 3/4 oz.) cream of mushroom soup
1 cup Ritz crackers, crushed (about 22 crackers)
1 tablespoon extra virgin olive oil
1 tablespoon butter
1 teaspoon Morton table salt
1/2 teaspoon freshly ground black peppercorns (Tellicherry)
1/2 teaspoon Wild Bill's Meat Rub

OPTIONAL TOPPING

1/2 cup bread crumbs
3 tablespoons melted butter

Mix bread crumbs with melted butter and evenly spread on top of casserole prior to baking.

Placed peeled and cubed squash in a 6 quart heavy stockpot, cover with water and boil on high heat for 10 minutes uncovered until squash is tender.  Drain squash in colander and allow to cool.  In a small skillet over medium heat, add butter and olive oil and sauté onion and bell peppers until tender, about 5 to 7 minutes.  Preheat over to 350 degrees F.  Add drained squash to a large mixing bowl and mash until smooth.  Add eggs, onion and bell pepper mixture, crushed Ritz crackers, cream of mushroom soup, Cheddar Cheese, salt, pepper, Wild Bill's Meat Rub and mix thoroughly.  Add mixture to a well greased oven proof 2.5 quart casserole dish and place in a 350 degree F. oven for 45 minutes until top is golden brown.  Allow to rest 10 minutes and serve while hot with your favorite main dish.

YIELD: 8 servings.

Above Hubbard squash casserole prepared on 11-19-14 and was outstanding.  David and Tammy Stewart of Ellerbe, NC supplied me with one of their home grown Hubbard squash and I took a pix of him with the squash but I must have deleted the file.  This is a fairly generic recipe from the net with my own twist to the recipe.

This is a fun and easy recipe to do.  The Hubbard squash is a right homely and ugly looking squash resembling a pumpkin in shape and texture but they do have wonderful flavor to them.  Below David Stewart with the Hubbard squash:
