HOME MADE FRENCH FRIES

INGREDIENTS:

1 to 4 Russet baking potatoes
1 tablespoon granulated sugar
1 tablespoon corn syrup
Kosher or Sea Salt
Peanut oil

Wash potatoes and peel or leave the skin on.  Cut and/or slice into 1/3 to 1/2 inch thickness and width.  Soak potatoes in ice cold water for at least 5 minutes to remove some of the starch and keep from turning brown,  Drain well in colander.  Add boiling water to a pan and add sugar and corn syrup and mix well.  Add potatoes and blanch for 5 to 10 minutes.  Drain potatoes in colander and pat dry with paper towels.

Place potatoes in a plastic zip lock type bag or plastic container and freeze for 20 minutes.

In the meantime, heat at oil in deep fryer and if using a heavy bottomed Dutch oven type pot, fill about 1/2 full of oil and heat oil to 350 to 375 degrees F.  Deep fry potatoes for 3 minutes and remove from hot oil and let drain for 3 minutes and place back into hot oil and deep fry for 5 to 6 minutes until golden brown and crispy.

Allow hot fries to drain from French fries over deep fryer and or Dutch oven and place fries on paper towels to absorb any oil left and season with salt while hot and serve immediately.

YIELD: 1 large russet potatoes equals two (2) medium sized servings

 

Above French fries deep fried on 03-10-13 and were "off the chain good."  The high dollar big name TV Chefs are doing their French fried potatoes similar to this recipe and believe me, the additional steps are well worth the extra time and effort.  My bride and myself have made home made fries for many decades but this has got to be the best fries we have ever done and consumed!  The double deep frying along with the blanching and  partially freezing them has to be the "secret".

NOTES:  The French Fry Cutter that I am using is not expensive and probably an overkill for doing fries on a small scale in the home kitchen  but I like trying out new kitchen gadgets.   You can just as easily cut the potatoes with a Chef knife and this French fry cutter does take some muscle power to push the potato through it.  It came with a 3/8 inch square cutter and I ordered an additional 1/4 and 1/2 inch cutter blade assembly which is easy to change out and not too much trouble to take apart and fully clean. 

I am totally impressed with this recipe which is a compilation of various home made French fry recipes from the internet.
