Fresh Apple Cake

FRESH APPLE CAKE

INGREDIENTS:

1 1/2 cup oil                1 teaspoon baking soda
1 teaspoon vanilla      2 cups sugar
1 teaspoon salt           3 cups chopped apples (good cooking apple, Granny Smith's works fine)
3 eggs                         1 teaspoon cinnamon
1 cup nuts                    3 cups plain flour

Blend oil, sugar and eggs.  Sift flour, soda and salt and cinnamon.  Add to sugar mixture, add vanilla, apples and nuts.  Pour in tube pan.  Bake 1 hour and 15 minutes at 350 degrees.  Let set in pan 5 minutes, then turn out on cake plate; cool slightly.  Spoon topping onto cake allowing to drizzle down the sides of cake.

TOPPING

INGREDIENTS:

3/4 cup brown sugar         1/4 cup butter
1/2 cup evaporated milk

Mix sugar, butter and milk.  Cook 2 1/2 minutes or until thick.  Spoon topping onto cake allowing to drizzle down the sides of cake.

I had to sample a piece of this cake and it was very moist; the contrasting texture and taste of the fresh apples, pecans and other ingredients was outstanding.  I could have used a much thinner knife blade to cut the cake but in too big a hurry!  The cake did not linger very long in the plate and saving some room for a helping of venison stroganoff on top of a bed of sticky rice.
