EARTHQUAKE CAKE

INGREDIENTS:

1 1/2 Cups pecans, chopped
1 Stick margarine, softened or butter
1 Can (3 ozs.) coconut
1 8 oz. Cream cheese, softened
1 Box German chocolate cake mix (prepare as on pkg.)
1 Box powered sugar (1 lb.)


Grease 9 x 13 inch pan and sprinkle pecans in bottom of pan.  Sprinkle coconut over pecans.  Prepare cake mix.  Pour over pecans and coconut.  Melt margarine and Cream Cheese.  Add powdered sugar.  Mix well.  Pour mixture over cake batter.  Bake at 350 degrees for 45 minutes.

YIELD:  12 servings 3x3 inches

My bride baked the above earthquake cake on 11-26-14 and it is "off the chain good."  I took the opportunity to cut the cake and get a close up side view pix, whereby you can see how the topping migrated to the coconut and pecans below.  It is very easy to discern where the cake got its name from.........grin if you must!  This is a very rich, moist and tasty cake and a little goes a long way.

Finished earthquake cake cooling down and ready for a taste test!  I guarantee you this simple cake will relieve any "sweet tooth" that you may have at the time!  After cake cools, you will see where it got it's name from.
