Deep Fried Oysters Louisiana Style

DEEP FRIED OYSTERS LOUISIANA STYLE

INGREDIENTS:

24 fresh shucked oysters
Peanut oil for deep frying

DRENCH (WET MIX)

2 eggs
2/3 cup of milk
1 tsp. Wild Bill's Meat Rub
1/2 tsp. garlic powder
1/2 tsp onion powder
1/2 tsp. Louisiana hot sauce
1/4 tsp. cayenne pepper (optional) since there is cayenne pepper in Wild Bill's Meat Rub
Salt and fresh ground black pepper.

DREDGE (DRY MIX)

2 cups corn flour (or use House-Autry seafood breader mix 205)
3/4 cup cornstarch
1 tsp. Wild Bill's Meat Rub
1 tsp. Old Bay Seasoning
1/2 tsp Kosher or Sea Salt
1/2 tsp. freshly ground black pepper corns (Tellicherry)

Mix all the wet mixture ingredients in a plastic bowl; add oysters and let marinate covered for about 25 minutes in refrigerator.  Meanwhile, fill a deep fryer or heavy bottomed pot three quarters full with peanut oil and heat to 350 degrees F.  Drain the oysters and place on paper towels to dry.  Coat thoroughly with the dredge (dry mix) and shake off any excess.  Deep fry in hot oil until golden brown about 3 to 5 minutes.  Remove and drain on baker's rack suspended over a pan; works better than paper towels.  Do not overcrowd deep fryer which can lower the oil temperature rendering greasy oysters.  Serve while hot with your favorite sauce as an appetizer or add to your seafood platter.

YIELD:  4 servings

Above deep fried oysters prepared on 01-24-15 and was outstanding.  I took the short cut on this one and used only House-Autry seafood breader with 1 tablespoon of Old Bay Seasoning for the dredge without the drench ingredients which has less heat than the original recipe above.  Served with Texas style French fries, marinated slaw, shrimp cocktail sauce and fresh squeezed lemon juice.

NOTE:  My favorite oysters are fresh harvested oysters in the shell, roasted over a live bed of hickory coals in their own juices,  immediately shucked and eaten right off the shell.   It doesn't get any fresher or better than that!
