Cornbread Dressing

TWEET’S OLD TIMEY CORNBREAD DRESSING

INGREDIENTS:

      6  cups cornbread crumbs                              2 cups biscuit crumbs
   1/2  teaspoon salt                                               1 teaspoon fresh ground peppercorns (Tellicherry)
      2  tablespoons rubbed sage                          2 cups chopped celery
1 1/2  cups finely chopped onion                      1/2 cup butter
   1/3  cup water                                                     4 cups reserved chicken stock or broth  (prefer Swanson brand)
    1/2 cup vegetable oil                                         3 eggs, lightly beaten

Combine first 5 dry ingredients in a large bowl.  Set aside.  Combine celery, onion, butter and water in a medium saucepan; bring to a boil over medium heat and simmer for about 5 minutes.  Remove from heat and add to cornbread mixture; stir in broth, oil and eggs, mixing well.  Add additional chicken stock as needed.  Pour into a greased shallow 2 1/2-quart baking dish and bake uncovered at 375 degrees F. for 45 minutes or until set and golden brown.

Variations:  You can substitute Pepperidge Farms cornbread stuffing mix and Pepperidge Farms bread crumbs if you do not wish to make your own from old breads.  This recipe is nearly identical to the one in Fannie Flagg's "Whistle Stop Cafe Cookbook".

OPTIONS:  You can add 3 chopped up boiled eggs and cooked giblets to the mixture if desired.  We normally do not add boiled eggs or giblets since we serve the giblet gravy separate.

YIELD: 12 to 14 servings
