Corn Fritters

CORN FRITTERS ANSON COUNTY, NC STYLE

INGREDIENTS:

1 (14.5 to 16 oz.) can cream-style corn
1 1/2 cups all purpose flour
1 1/2 teaspoons baking powder
1 teaspoon Morton table salt
1/4 teaspoon freshly ground black peppercorns (Tellicherry)
1/2 teaspoon Wild Bill's Meat Rub (Optional)
1 egg, slightly beaten
1 tablespoon sugar
Crisco oil for frying (1 cup or less)

Sift together all dry ingredients in a mixing bowl.  Mix corn and egg.  Add dry ingredients to the corn egg mixture and gently stir to  combine but do not over mix.  If batter is too thin, add more flour and if too thick, add milk.. 

Heat oil in a large skillet over medium heat and drop batter by larger tablespoons (about 4 to 6 at at time in a 13 inch diameter skillet) into hot oil and fry about 2 minutes on each side until golden brown.  Remove and drain on paper towels or a bakers rack over a regular pan.  Dust with powdered sugar if desired.

YIELD: 12 to 16 corn fritters

This recipe was inspired by Brooke Crider, proprietor of Buff Monkey Fitness Company in Wadesboro, NC who mentioned how much she liked fried Corn Fritters and modified my regular fried cornbread recipe after doing an internet search for corn fritter recipes for comparison.  I will torture her a little by sending the close-up pix of those golden fried beauties!  Payback for all the voluntary torture while working out in her fitness center.  Grin if you must!  You can get creative and add additional ingredients to your liking such as green onions, bell pepper, chopped parsley, cilantro, green chilies and/or jalapeno but the simple no frills Corn Fritter recipe above was fantastic!
