BELGIAN WAFFLES

INGREDIENTS:

1 cup all-purpose flour (White Lily)
1 cup cake flour Swans Down brand
1 tablespoon Baking Powder
1/2 teaspoon Morton table salt
1/2 teaspoon cinnamon
1/8 teaspoon (pinch) ground cloves
1/4 teaspoon ground nutmeg
4 large eggs separated
1/2 cup granulated sugar
1 1/2 cups milk or evaporated milk
1 cup unsalted butter, melted
1 teaspoon vanilla extract

Preheat the waffle iron according to the manufacturer's instructions.

In a medium bowl, combine flour, sugar, cinnamon, cloves and baking powder.  In another bowl, lightly beat egg yolks.  Add milk, melted butter and vanilla; mix well.  Stir into dry ingredients just until combined.  Beat egg whites until stiff peaks form; fold into batter.  Do not over mix otherwise waffles will be tough.

Spray waffle iron with non-stick vegetable spray; add batter to preheated waffle iron and bake according to manufacturer's directions until golden brown.  Serve with strawberries or fruit of your choice, whipped cream and Vermont Grade A maple syrup.

YIELD: 10 waffles (about 4-1/2 inches) or 6 seven (7) inch diameter waffles

Above Belgian Waffle served on 07-19-13 with home made strawberry sauce, fresh sliced strawberries, fresh blueberries and Reddi wip whipping cream.  The waffles tasted fantastic without any sauce or topping; were light and melt in your mouth.  The pinch of ground cloves was my own touch and really adds a nice unusual flavor to them but not overpowering.

NOTES:  I used an inexpensive Presto 03510 Flip Side Belgian Waffle Maker and it took 1 cup of waffle batter to completely fill the waffle grids and they were golden brown and fluffy when timed at 2 minutes.  The waffles from this waffle maker are very thick, one inch plus and one waffle will about max one person out unless you have a humongous appetite.....grin if you must.    My bride was very impressed with the flavor and texture of the Belgian Waffle along with my home made strawberry sauce.  I used 1/2 cup of whipping cream and 1 cup of regular milk instead of just using just 1 1/2 cups of Carnation evaporated milk.  If you want to spend some extra bucks, go with the Kitchen Aid Pro Line Waffle Maker model # KPWB100.

I did batch of Belgian Waffles on 07-13-13 and used only strawberry sauce and whipping cream and one of my lovely food critics in Cheraw, SC advised me the pictures of the plated waffle would look much better with fresh sliced strawberries as far as color appeal, boldness and presentation and I have to agree with her 100 percent but as far as taste goes, no way!  I did have plans to add fresh sliced strawberries in addition to the strawberry sauce thinking I had another partial carton but couldn't find them....my bride might have snacked on them or it could have been myself....grin if you must!.  The fresh home made strawberry sauce really complemented the Belgian Waffles.  Next time, I will do a picture using fresh sliced strawberries just for her and throw in a few fresh hand picked blueberries for color contrast too ......grin if you must!
