BBQ PORK CHOPS SLOW COOKER STYLE

INGREDIENTS:

4 Pork Chops (bone in) about 8 ounces each
1/2 teaspoon Wild Bill's Meat Rub
1/2 teaspoon Meat Tenderizer
1/2 teaspoon Morton table salt
1/4 teaspoon freshly ground black peppercorns (Tellicherry)
2 tablespoons extra virgin olive oil

BBQ SAUCE RECIPE

Use your own BBQ sauce recipe, store bought or the one below:

WILD BILL'S BBQ SAUCE

INGREDIENTS:

2 cups apple cider vinegar
2 tablespoons Worcestershire sauce
1 tablespoon fresh squeezed lemon juice
2 cups ketchup
1 tablespoon dry mustard
3/4 cup brown sugar
1 1/2 teaspoons chili powder
1/2 teaspoon Liquid Smoke (Colgin) brand
1 teaspoon freshly ground black peppercorns (Tellicherry)
1 teaspoon Morton table salt
1/2 teaspoon Cayenne pepper
1/4 cup Mrs. Butterworth pancake syrup, white granulated sugar or Molasses
1/2 cup Jack Daniels Tennessee Whiskey or 1/2 cup Jim Beam Bourbon or Early Times Whiskey

Mix above BBQ sauce ingredients in a sauce pot and bring to a boil making sure sugar dissolves; reduce heat to low and simmer for 30 minutes.  Let cool and store in a glass covered container in refrigerator.  This BBQ sauce is referred to as the Piedmont, Western North Carolina or Lexington, NC style BBQ sauce with the main ingredients ketchup and vinegar.  Coat pork chops with a light sprinkling of Wild Bill's Meat Rub, Meat Tenderizer and freshly ground black peppercorns on both sides.  Using a fork, punch a few rows of holes in each pork chop both sides and allow chops to sit out at room temperature for 30 minutes to 1 hour to allow the rub and meat tenderizer to do it's magic.  Add 2 tablespoons of olive oil to a large heavy bottom skillet over medium heat and brown pork chops on each side; about 3 to 4 minutes per side.  Place 1/2 of the bbq sauce (about 1 1/2 to 2 cups) in a 6 quart slow cooker and add the pork chops.  Slow cook for 3 hours on low setting and serve while hot, adding reserved bbq sauce on pork chops.  Serve with your favorite sides.

YIELD:
4 servings

Above bbq pork chops prepared on 01-29-15 and was "pull off the bone good."  Served with yellow rice and steamed green beans.  I toned the bbq sauce down for my bride and didn't add any cayenne pepper and used more sugar........"beautimous" stuff!  I used my standard array of seasonings and my own bbq sauce for this recipe.

I didn't special order thick cut pork chops, but the above chops were very large......only two would fit into the large 13 inch diameter skillet I use for about everything.  I also used a much larger slow cooker than 6 quarts.  There was one pork chop left over and as I was getting it out of the slow cooker to save for a snack tomorrow, the bone literally fell off the chop.....grin if you must!

This recipe is about as easy as it gets and a change of pace from your regular pork chop recipes.
