Baked Sweet Potato Wedges

BAKED SWEET POTATO WEDGES

INGREDIENTS:

4 large sweet potatoes, peeled or scraped and cut into wedges
1 1/2 teaspoons cinnamon
2 tablespoons brown sugar
3/4 cup butter, salted or unsalted
1 teaspoon Wild Bill’s Meat Rub (my house seasoning) optional
2 teaspoons Morton table salt
2 teaspoons freshly ground black peppercorns (Tellicherry)

Preheat oven to 400 degrees F.  In a large skillet or saucepot over medium-high heat, melt the butter.  Remove the skillet from the heat and stir in the cinnamon, brown sugar and Wild Bill’s Meat Rub.  Add the potato wedges to the butter mixture and toss to combine.  Season the potatoes with the salt and pepper.  Place potatoes in a single layer on a baking sheet.  Roast the potatoes for 20 minutes and turn over and bake an additional 20 minutes until fork tender.  Remove from the oven to a serving dish and serve as a side dish or as an appetizer.

YIELD:  4 servings

The above baked sweet potato wedges baked on 04-08-13 and were awesome.  The taste and texture with the caramelized brown sugar, cinnamon and butter will awaken about anyone's dormant taste buds.  They were so tender, I had to use a spatula to remove them off the baking pan to keep them from breaking apart; melt in your mouth....shut the front door!.  The optional  Wild Bill's Meat Rub which is my standard house seasoning will add just a little spice kick or heat to them if that is what you like.

This is a generic recipe from the internet with a couple additions and modifications to the ingredients.  If you use a large enough saucepot, you can eliminate the usage of the mixing bowl as I show in the thumbnail pixs.
