Baked Ham With Honey Brown Sugar Glaze

BAKED HAM WITH HONEY BROWN SUGAR GLAZE

INGREDIENTS:

1 ham 10 to 15 lbs., prefer Smithfield 1/2 ham with bone in
1 tablespoon Wild Bill's Meat Rub
1 cup water

HONEY BROWN SUGAR GLAZE

INGREDIENTS:

1 cup honey
1/2 cup brown sugar, dark or light
1 stick butter

Place all ingredients in sauce pan and heat on low to medium heat until sugar is dissolved and ingredients thoroughly mixed.

Preheat oven to 325 degrees F.  Remove ham from sealed wrapper and place on a cookie sheet or shallow pan. Sprinkle a light coating of Wild Bill's Meat Rub over entire ham.  Allow ham to sit out at room temperature for at least an hour.  Score entire ham 1/4 inch deep through the fat layer making a diamond pattern 1 inches wide.  Line a 2 to 4 inch deep heavy bottom roasting pan with heavy duty aluminum foil.  Add water to roasting pan.  Place ham (cut side down) in center of pan and cover (tent) with aluminum foil sealing edges tightly.  Place in oven using lower 1/3 oven rack and bake for 2 hours.  Remove roasting pan from oven and remove aluminum foil tent and discard.  Increase oven temperature to 425 degrees F.  Spread a heavy coating of honey glaze over entire ham placing ham back in oven for 15 minutes.  Repeat the glaze procedure three more times for a total glaze/cook time of 1 hour at 425 degrees F.  RULE OF THUMB: 12 to 15 minutes baking time per pound should render ham done at 325 degrees F.  Check ham internal temperature using a reliable digital instant read thermometer and make certain ham is at least 160 degrees F.  Allow ham to sit out at least 15 to 30 minutes before carving.  Serve while hot with your favorite sides.

Traditionally, my bride has always done the baked ham using various condiments such as whole cloves, cherries, pineapple slices, etc., but this year decided to do a baked ham myself.  I had not planned to do a photo sequence recipe shoot for my website and this was more or less impromptu.  I got in a "Jack The Ripper" mode with the small paring knife that is razor sharp and scored aka "slashed" the ham much deeper than 1/4 inch and my bad on that.....grin if you must!  The baked ham was moist, juicy and succulent with a wonderful sweetness from the honey brown sugar glaze that permeated into the meat and also left a good char or bark on the exterior of the ham.  Also, the usage of Wild Bill's Meat Rub added additional complex flavors.
