ASPARAGUS SPEARS

INGREDIENTS:

1 bunch fresh asparagus spears, trimmed
1 tablespoon olive oil
1 tablespoon butter
1 medium shallot, chopped fine
1 clove garlic, chopped fine
Sea Salt (to taste)
Freshly ground black peppercorns (Tellicherry)
1/4 lime, juiced
Lime slices for garnish
Parmigiano Reggiano cheese, grated  (optional)

Melt butter with olive oil in a large skillet over medium heat adding garlic and shallots; cook for 2 minutes.  Add asparagus spears and cook with lid on skillet for about 5 minutes until tender.  Serve with squeezed lime juice over hot asparagus, salt and pepper to taste and add fresh grated Parmigiano Reggiano cheese.  Garnish with lime slices.

This is a very easy recipe to do and is outstanding providing a very nice contrast to the Cornish hens with orange sauce.
