ANGEL FOOD PINEAPPLE CAKE

INGREDIENTS:

1 Box Betty Crocker Angel Food Cake Mix
1 20 oz. can crushed pineapple including the juice

Preheat oven to 350 degrees F.  Place one box of Angel Food cake mix in a mixing bowl and add one 20 oz. can of crushed pineapple including the juice and thoroughly mix.  Add mixture to a 13 x 9 x 2 baking dish or a regular bunt cake pan and bake at 350 degrees F. for 30 minutes until top is golden brown and a toothpick inserted into middle comes out clean.  Allow to cool and top with whipped cream and/or topping of your choice.

YIELD:  12 servings

I topped the angel food pineapple cake with some Cool Whip and a cheery that has been soaking in a quart of (legal) Moonshine for several months; gift from a special friend.  The smell of the fresh cut Mint leaves was awesome as well.  I only allowed the cake to cool about 30 to 45 minutes and it was still quite warm and didn't cut that well but was delicious for certain.  The cake was extremely light and fluffy as most angel food cakes are and certainly glad that the force of gravity kept it on the serving dish. 

NOTE:  Angel food cakes will rise much higher without any non-stick spray added to your baking dish since you want the cake mix/batter to "walk" up the side of the baking dish/pan and flip dish and/or pan upside down and allow to cool, whereas gravity will help the cake to expand in height.
